Most everything is up 3-4%. Luckily we are still under the older “higher of Class III or Class IV” for the Class III skim. If the new system in the Farm Bill had been implemented (average plus 0.74), the Class I skim price would have been 0.40/cwt less. For the 2/9 and 2/16 weeks, the price of cheese and whey were both down from last month. This is the highest Class I price since October 2018, which appeared to be a peak.
