Venae Watts, co-owner of Minerva Dairy on making butter with higher fat than standard U.S. products

A fifth-generation butter maker, Venae Watts is a co-owner of Minerva Dairy in northeast Ohio. Minerva butter is made with higher fat than standard U.S. products but slightly lower than European style, appealing to consumers who want a premium product. Milk is sourced directly from what she terms family farms, about 75, whose cattle all have access to pasture.
