Texas Tech University Professor and Cargill Endowed Professor Dale Woerner will address “Beef on dairy research provides insight to carcass value and consumer acceptance.” This one-hour webinar is free.

Beef on dairy in a feedlot is a relatively new business model. Borrow business models from the beef feedlot perspective and apply them to beef on dairy. Key topics include nutrition, genetics and marketing options.

Woerner will explain how producers can capitalize on:

• Meat from beef-on-dairy crossbred cattle provides a desirable eating experience, with improved tenderness and flavor, compared with conventional beef.
• Strip loin steaks from beef-on-dairy cattle have improved color and shelf-life performance, as well as improved steak shape compared with traditional, straightbred dairy cattle.
• On average, beef-on-dairy cattle produce carcasses with greater red meat yield than conventional Holstein steers, and high-yielding beef-on-dairy cattle can yield as high or higher than conventional beef cattle.

Woerner earned his bachelor’s and master’s degrees in animal science, meat and food industry management from Texas Tech University in 2003 and 2005, respectively, and earned his PhD in animal science/meat science from Colorado State University in 2009. He served on the faculty at Colorado State University for nine years before joining the faculty at Texas Tech University. He has conducted more than $12 million in industry-funded research and published more than 300 scholarly works. In 2013, Woerner was selected by Vance Publishing as a “40 Under 40” honoree as a young leader in the agricultural industry. Also, he was named one of the Top 10 Industry Leaders for 2014 by Cattle Business as a “Difference Maker” and was recognized along with his wife Wendy in 2014 by Texas Tech as Horizon Award Recipients. In 2015, he received the American Meat Science Association’s Achievement Award and in 2018 he was recognized by the American Society of Animal Sciences with the Early Career Achievement Award. That same year, he received the North American Meat Institute’s Harry L. Rudnick Educator’s Award.
